Sinolea

The Sinolea, is a cold pressing milling system which employs no pressure or added water. It consists of a stainless steel comb which dips into the olive paste: at every dip the comb covers itself in a thin layer of oil, which then gets wiped off into a bowl. 

Various methods have been employed throughout the centuriesto extract oil from olives - most methods that are now used are all based on pressure, thus obtaining an oily paste containing both the olive's own water, and its oil. Research has shown that both high temperature and the use of water during extraction have a negative impact on olive oil quality.


The Sinolea method used at Mozari3 employs an extraction system based on natural low-temperature oil dripping, which yields superior quality extra virgin olive oils.

Health Benefits

  • Knife pressing olives produces the highest percentage of natural antioxidants and preserves the most delicate components of the fruit.

  • High Vitamin "E" since olives are harvested when they are still green.

  • We use vented crates, and press the olives within 6 hours of harvest to ensure low acidity levels

Nurturing & Picking

The olives we used in this oil are a mixture of Local Roman (35%), Spanish (40%) and Kalamata (25%) olives, this mixture gives that light and smooth taste.

The trees have been nurtured and taken care of by generations of farmers, which have passed their passion they have for the land and trees, to the next generations.

During picking season families from the near by villages join us in this process, just like their grandparents did.

Sinolia knife pressing method does not require adding water to the olive paste, and water efficient watering systems are used in the farms

The farms and olive presser annually save:

  • 3,820,480KG of CO2

  • 412.04KG of NOx

  • 12.07KG of SO2

Labor

We work with the ILO (International Labor Org) to make sure that all our farms are a fair work place

Some of our farmers are Syrian displaced families, we provide them with a decent environment to live in and a school for the children

WASTE

Olive oil solid residues  are used as a heat source in heating water for farms, leaves are used to make compost, and no disposables are used in the process
